"Moderation and knowledge are power," says Corporate Executive Chef Brian Redzikowski of Kettner Exchange. "It's fine to eat butter, eggs, and bacon. But find the nitrate-free bacon. Use organic whole eggs, grass-fed butter, know where your meat comes from and where your cream comes from." Words to remember: "If you seek out the best products, your body will thank you." Piña colada by Steven Tuttle, Kettner Exchange. So it’s not technically frozen, but trust me on this one, you won’t miss the difference. It’s shaken to a perfect whipped consistency, and it is just as refreshing and glorious as its colder cousin. It’s made with Hamilton’s Demerara Rum, fresh pineapple, house-made coconut syrup and lime, and garnished with a pineapple wedge and fronds.

Sure, there's a line wrapped around the block on Saturday nights. as this booming party palace is still the sexiest scene in Little Italy, with DJs and cabana revelry up top. But that's just one of many experiences found at KEX. Opt for a sunny Sunday afternoon brunch, or dress up for a quieter weeknight date on the rooftop, where you'll find cozy blankets, tiki-style rum libations, and chef Brian Redzikowski's superb hamachi tostada, bigeye tuna tacos, and a damn fine double-double burger.

Executive chef Brian Redzikowski shines brightest at his Chef's Table experience, when he can fully tap into his culinary depths, but the well-trained chef's Asian-inflected menu is consistently tasty and thoughtful. Food-focused folks may want to eschew KE's club-like weekends in favor of quieter weeknights.

We decided to pay a visit to Brian Redzikowski, Executive Chef at SDCM, the creative team behind San Diego’s acclaimed Kettner Exchange, to get the details on the restaurant group’s new venture, The Grass Skirt. Redzikowski has been all over the country lately—he was invited to cook at the James Beard House earlier this year, just completed a coveted Oustanding in the Field dinner in Temecula and recently held a special dinner with Miguel Angel Guerrero at Kettner Exchange.
